My mom got this recipe is from the back of the Arrowhead Mills Organic Oat Flour Bag and not from Pinterest as I had first thought.
1 Egg or ¼ Cup Liquid Egg Substitute
½ Cup Melted Butter
½ Cup Honey
1 Cup Arrowhead Mills Oat Flour
½ Tsp. Baking Soda
½ Tsp. Sea Salt
½ Tsp. Apple Pie Spice (My mom didn’t have so she put Cinnamon and Nutmeg)
1 ½ Cups Instant Oatmeal
½ Cup Chopped Nuts
Beat egg; add other liquid ingredients and blend thoroughly. Stir dry ingredients together, making certain there are no lumps. Add to liquid mixture and mix well (Actually I just dumped it all together); stir in oatmeal and nuts. Drop by heaping teaspoonfuls onto a lightly greased cookie sheet. Bake at 325°F for 12-15 minutes. Makes 2 dozen.
When Wesley made the recipe he put in more honey (to make the cookies sweeter) and added raisins as well. The honey also made the cookies not crumble as much.
